Kappa Upperi, or Tapioca Chips, has a deep-rooted History in Kerala’s culinary and Agricultural Traditions. Tapioca (Kappa in Malayalam) was introduced to Kerala in the 18th century by the Travancore King, Vishakham Thirunal, as a famine-resistant Crop. Since then, it has become a staple Food for Malayalis, especially in rural Areas. Initially consumed boiled with Coconut Chutney or Fish Curry, Tapioca was later transformed into Kappa Upperi, a crispy Snack made by slicing and deep-frying it in Coconut Oil.
