Kerala Mango Pickle, or Manga Achaar ( Malayalam) is an iconic Condiment in Kerala, made from raw Mangoes, Spices, Salt, and Oil. Mangoes are abundant during the Summer Months in Kerala when these unripe Mangoes were harvested. Kerala has a rich spice Trade History today and during the ancient times, for trading Spices like Black Pepper, Cardamom, and Cloves with the Arabs, Portuguese, Dutch and the British Traders who frequented the Malabar Coast introduced different Techniques of Preservation and Culinary Influences, contributing to the development of Pickling Techniques developing to be a beloved part of the regional Culinary Legacy.
